Peperoncini sott' Olio is Dancing Ewe Farm's DYNAMITE! A small amount packs a huge spicy punch! Some people believe tomatoes taste better in Italy, and some people also believe the hot peppers are hotter in Italy. In part due to a huge love affair with Italy and in part due to the climate. Depending on the area of Italy, these hot, dry summers allow for sugars and oils to concentrate within the plant offering a spicier or more flavorful fruit.
Our hot peppers are grown on a local family farm, 15 minutes from Manciano Italy. Our friend, Roberto Sartucci, his mother and father, and two sisiter's together operate a classic Tuscan family farm. The primary function of the farm is managing 500 Sardinian dairy ewes for milk production. Along with 75 olive trees, a 4 acre vineyard, a handful of pigs and chickens, they also have a huge garden.
We are thankful they plant a several rows of hot pepers for us to harvest late summer. After, they are harvested, we wash them thoroughly, sautee them lightly in olive oil and pack them under olive oil.
