Dancing Ewe Farm’s Caciotta is a unique rendition of a classic Tuscan style Caciotta.
With its high content of butterfat and protein, Caciotta is a well-balanced table cheese that offers subtle complexities.

What makes this cheese truly unique is the quality of the milk. Thirty-five Jersey cows are milked twice a day to produce our Caciotta. The cows are rotationally grazed throughout the summer and are fed hay and grains during the winter months. These feed variations help promote the delicate flavor tones that our cheese offers.This is also the backbone to producing an artisanal, handcrafted cheese.

Prima Caciotta is made with a unique process that reflects its Tuscan roots. The milk is handled gently and there is no automatic agitation or cutting. Everything is done by hand with no pasteurization, no preservatives, and no mechanical pressing: just plain and simple cheese.
